Zucchini Pizza Crust Recipe

If you’re anything like me, pizza is definitely one of your favorite foods, or at least top 5.

However, it’s not something you can just eat everyday since pizza crust is loaded with carbs.

But, that has all changed.

Recently I’ve fell in love with zucchini and have been searching for creative yummy zucchini recipes. So one day I stumbled across a blessing sent from God himself, a zucchini crust pizza recipe! What!!!

Of course I had to try it!! I adjusted the recipe to my liking and I think you guys will enjoy! I promise, it’s so good you may never need to order Papa John’s again!

Ingredients:

Zucchini Crust
1 zucchini
1/2 cup grated Parmesan cheese
1 egg
1 tablespoon of almond flour

Pizza Toppings:
1 spoonful of tomato sauce
1 cup of baby Spinach
1 cup of sautéed mushrooms
1 cup mozzarella cheese
Grilled jumbo shrimp (as many as you like)
Grilled chicken (as much as you want)

Directions:

Preheat your oven to 450 degrees.

You will need to use a grater to prep the zucchini.

In a big bowl mix the zucchini, Parmesan cheese, egg, and almond flour together. Once mixed use your hands to squeeze the juice from the mixture.

Place parchment paper on a nonstick pan and create a pizza shape with the zucchini mixture.

Place in the oven for 16 minutes and check the crust halfway through. After 16 minutes adjust the oven to 500 degrees and continue baking the zucchini for an additional 5 minutes. Remember to continuously check the crust, remove it once it’s brown.

Now for the toppings!!!!

Turn the oven down to 350 degrees.

Start by spreading a spoonful of tomato sauce on top of the zucchini crust. Add spinach, mushroom, chicken and shrimp, then top with mozzarella cheese. Feel free to be creative with the toppings!

Place in the oven for an additional 5 minutes and wahla!!! Soooo yummy and of course super healthy!!
